Navajo Stew

Ingredients

  • 2 Tbsp. oil
  • 2 cups chopped onion
  • 3 garlic cloves
  • 1 tsp. salt
  • 1 bell pepper
  • 1 Tbsp. cumin
  • 2 tsp. coriander
  • 4 cups sweet potatoes
  • 2 cups water
  • 1 can diced tomatoes
  • 2 Tbsp. canned chipotles in adobo sauce
  • 1/2 cup chopped cilantro
  • 1 can black beans
  • 1 cup frozen corn

Directions

  1. Warm oil in covered soup pot on low heat.
  2. Add onions, garlic, and salt. Cook, stirring occasionally, until onions are soft (~10 min)
  3. Stir in bell peppers, cumin, and coriander. Cook for a couple of minutes.
  4. Add sweet potatoes and water, cover, and bring to a boil.
  5. Reduce heat and simmer ~10 min, until sweet potatoes are tender.
  6. Puree the tomatoes, chipotles, and cilantro in blender.
  7. When veggies are tender, add the puree, beans, and corn.
