Ingredients
- 2 Tbsp. oil
- 2 cups chopped onion
- 3 garlic cloves
- 1 tsp. salt
- 1 bell pepper
- 1 Tbsp. cumin
- 2 tsp. coriander
- 4 cups sweet potatoes
- 2 cups water
- 1 can diced tomatoes
- 2 Tbsp. canned chipotles in adobo sauce
- 1/2 cup chopped cilantro
- 1 can black beans
- 1 cup frozen corn
Directions
- Warm oil in covered soup pot on low heat.
- Add onions, garlic, and salt. Cook, stirring occasionally, until onions are soft (~10 min)
- Stir in bell peppers, cumin, and coriander. Cook for a couple of minutes.
- Add sweet potatoes and water, cover, and bring to a boil.
- Reduce heat and simmer ~10 min, until sweet potatoes are tender.
- Puree the tomatoes, chipotles, and cilantro in blender.
- When veggies are tender, add the puree, beans, and corn.
